What's different about this trip
You will walk further than you plan to
Twenty blocks looks like nothing on a map and takes twenty minutes on foot, and you'll do that several times a day. Whatever you'd normally consider a comfortable shoe needs to be one step more comfortable — and waterproof. Kerbside slush pools are ankle-deep at crossings for days after snow, and fashion boots with smooth soles are genuinely hazardous on the polished-marble lobby floors that follow.
The wind between buildings is the coldest part
Avenues run north–south and funnel wind straight down them; the temperature on your face on Sixth Avenue bears little relation to the forecast. A hat that covers your ears and a scarf you can pull up over your chin do more than a heavier coat. Gloves you can use a touchscreen through save you taking them off forty times a day.
Indoors is 24°C and you're carrying the coat
Restaurants, subway cars, museums and shops are heated hard. Every layer you wear must be one you're happy to be seen in, and you need somewhere to put the coat — a bag with a bit of give, or a coat you don't mind draping over a chair back. This is the main argument for two mid layers instead of one enormous parka.
Pack lighter than usual, deliberately
Anything you forget is available within a ten-minute walk, at any hour. That makes New York the wrong city to pack contingencies for. Bring a smart-casual outfit if you have a restaurant or a show booked — plenty of places still care — and leave the rest of the 'just in case' pile at home.
